Shelpek Recipe (Kazakhstan Flatbread)

Shelpek is Kazakhstan flatbread, and it is popular in central Asia. Shelpek is fried dough made from flour, milk, sugar, salt, and yeast. There is another fried dough in Kazakh cuisine; its ingredients are similar to flatbread. Baursak or Kazakh donut, do not miss this fantastic dessert. Chelpek is served with almost everything like sour cream, honey, or cheese. This flatbread is mainly served in the afternoon with jam and tea in Kazakhstan. Kazakhstan flatbread ingredient

Shelpek is traditionally made from baking powder. But we make it with yeast. Yeast will make it soft for a longer time. It is better to use a thick pan for frying the dough. After all, prepare these ingredients and follow me for making our bunds.

  • Flour, 2 1/3 cups
  • Instant yeast, ½ teaspoon
  • Milk, ½ cup
  • Salt, ½ teaspoon
  • Sugar, 1 teaspoon
  • Oil for frying

Shelpek recipe

  1. Heat ½ cup of milk and make it warm. Do not let it boil!
  2. Then add ½ teaspoon instant yeast to the milk and let them dissolve for about 15 minutes.
  3. Add ½ teaspoon salt and 1 teaspoon sugar to the milk and mix them.
  4. Pour 2 cups of flour into the milk gently and mix them.
  5. Add flour till making the dough. Then shape the dough like a ball.
  6. Cover a greased bowl and let the dough rest at room temperature for 30 minutes.
  7. Roll the dough and divide it into 6-8 parts.
  8. Pour flour on your work surface.
  9. Make each piece a thin circle of dough.
  10. Heat the oil in a thick pan.
  11. Fry the dough till making both sides slightly brown. It will fry so fast, be careful not to burn it.
  12. Our Shelpek flatbread is ready! Enjoy it!

How to serve Shelpek

Shelpek is served with jam, cheese, honey, sour cream, soup, salami, or everything you prefer. Also, you can serve it warm or cold. It is better to use it fresh.
